Cornella Infrared Red IPA 440mL Muscat distinctly Australian aromatic character ofInfrared is the second half of our Unseen Spectrum dual release, both brewed with SH 45, a new thiol unlocking yeast that targets aroma compounds bound deep in the grain and hops. Most of these compounds are chemically locked at the start of fermentation; SH 45 cleaves them free as tropical thiols you'd never get from these ingredients otherwise. To let those notes breathe, we leaned on dark Belgian candi syrup fermentable, characterful, but dry
